As people continued to throng her stall her excitement soon turned into a realization that she was going to run out of the potato mix soon. There was no way she could’ve made another batch in time. Did she panic? Nope. She turned adversity into opportunity. Her chef’s brain saw that she had all the veggies that could whip up a fancy pizza sandwich if not the potato sandwich. Everything fell into motion, folks were sent out for pizza sauce and mozzarella cheese, and voila! The stall began wafting out aromas of melted oozy cheese, tangy Neapolitan sauce and golden toasted bread.
